Sumatra coffee is very aromatic and makes a wonderfully satisfying cup – anytime of the day or night.Full of legends and mystery, the history of this coffee is as complex and interesting as a cup of the delicious, hot brew. The Dutch planted the first coffee plants in the early 19th Century in Sumatra, one of the thousands of tiny islands of Indonesia. These beans are known for producing a coffee that has a unique taste with a variety of subtle flavors. Sumatra Mandheling and Sumatra Lintong coffee beans are grown in the mountainous highlands region. Coffee from the Sumatra Gayo Mountain area or Aceh region are grown in the shade and without any chemicals. Green Sumatra coffee beans are known by their distinct asymmetrical shape and rich aquamarine color.
The brew’s unique flavor is enhanced by the manner the beans were processed. After the coffee cherries are picked, the farmers remove the skins, using rickety but picturesque machines made from scrap metal, wood, and bicycle parts. Next, the beans are allowed to ferment overnight; then they are washed by hand and dried in the farmer’s yard before going to a middleman’s warehouse. Here, they undergo more drying. Finally, the beans are loaded on trucks and taken to the coffee exporter at the seaport of Medan, where there is additional drying time. Exposing the beans to the pulp of the harvested fruit for extended periods of time produces the deeper tones in your cup of Extra Bold Sumatra Reserve.
Many Sumatran beans, grown by farmers in small cooperatives, are Certified Fair Trade Coffee. Most of the Aceh beans that you are likely to encounter in US coffee shops and sales, come from a large mill, which uses a meticulous wet method of processing. It meets international standards and is certified organic by a Dutch agency. The Gayo Mountain Washed beans produce a brew that is similar in flavor to that of the Lintong/Mandheling.
This mill also processes beans using a semi-dry method in which the outer skin of the coffee cherry is removed, leaving the beans covered with a sticky material. Next, they are naturally dried under the sun. These beans, marketed as Gayo Mountain Unwashed, produce an excellent, full-bodied coffee, after roasting.
