cooking a lot of rice over the stovetop?

How do you cook a lot of rice (around 3 lbs/6 cups uncooked) over the stovetop without burning it?

It’s super easy, and I swear by this.

1. Forget what the box/bag says
2. Measure out your rice and put it in a large, cool pot
3. Add enough water to cover the rice by about 2 inches and put over med-high heat
4. Stir often to keep it from sticking to the bottom as you bring it to a rolling boil
5. Continue to boil and stir (and add hot water if needed) until the rice is soft and the water has boiled off.
6. Let sit for a few minutes and fluff with a fork, season as needed.

Perfect rice, everytime!
